I’ve been making this recipe from the Detoxinista for awhile, and it’s a favorite. Homemade ice creams tend to have a grainy texture, but the addition of a surprise ingredient make this ice cream amazingly smooth. Guess what it is?! Avocado! To make it, make sure your avocados are ripe, but just barely, and definitely not overripe or the avocado flavor is strong. If you’re not a mint chip or avocado fan, try the peanut butter ice cream instead! This recipe is also REFINED SUGAR FREE! So exciting!
Mint Chip Ice Cream
2 ripe avocados
1/2 c. coconut milk
3 Tbsp raw honey
2 Tbsp coconut oil
1/2 tsp peppermint extract
Put it all in a blender and pulse till smooth.
Put it into your ice cream maker and let whirl until it’s almost frozen, then add
2 oz. dark chocolate, chopped or shaved
Once that’s mixed in, scrape it into a container and either eat immediately, or freeze.
