I haven’t been cooking lately since I haven’t been feeling well, but I’m on the upswing so I figured I’d thank him for his hard work while I was sick with a yummy dinner. This is basically “Hamburger Helper” gone wild!
Season 1 lb defrosted ground beef with
Penzey’s Mitchell Street Steak Seasoning or whatever steak seasoning is around
Tomato, Basil, and Garlic seasoning
Brown with 2 stalks of celery, sliced thinly
1/2 carrot, sliced thinly
2 inches green onion, sliced thinly (use scissors)
3 mini orange sweet peppers, diced
Add 1 jar pasta sauce (I used Trader Joe’s Pasta Pomodoro Sauce) or the equivalent of homemade
1 box gluten free penne
3 c. hot water
Put the lid on and simmer for 10-15 minutes, until pasta is soft
Serve with grated goat parmesan, dairy-free parmesan substitute, or a sprinkle of nutritional yeast.
