I’ve been experimenting in the kitchen with products from Tastefully Simple, because my friend Tori sells it and they have a great gluten free line! Seriously, I couldn’t tell their Gluten Free Vanilla Pound Cake was actually g-free. So tasty! Tori was a doll and gave me some stuff to play around with, and tonight’s dinner is exceptionally tasty thanks to her! I give you…*drumroll*…Tortilla Crusted Salmon! I broke up about 3/4 c. worth of their Blue Aztec Corn & Sesame Chips into small bits, and used their Ultimate Steak Seasoning on the fish as well, and it was delicious! Here’s where you can get the products, and here’s how I did it!
Tortilla Crusted Salmon
Preheat oven to 400 degrees F
Line a pan with aluminum foil.
Place 1 lb worth of boneless, skinless salmon filets on the pan, thawed.
Drizzle with olive oil
Sprinkle the fish generously with the TS Ultimate Steak Seasoning
Coat with 3/4 c. crushed Blue Corn Chips
Squeeze the juice of 1/2 lime onto the fish
Bake for about 15 minutes, until the fish flakes easily
